There’s a lot to be said for baking from scratch. The smells, the satisfaction, the smug sense of pride when your creation actually comes out of the oven looking like something Paul Hollywood might nod at approvingly. I love making things from scratch — especially gluten free foods. The experimenting, the floury chaos, the joy of pulling off something that doesn’t crumble into dust at first touch…
But sometimes, it’s all just a bit much, isn’t it?
This Easter, I had grand plans. I thought I’d be whipping up a whole spread of gluten free treats, testing out new recipes, maybe even throwing in a showstopper or two. But when I looked at the long weekend ahead, I realised something: maybe I didn’t have to do it all.
Rather than making a dozen different recipes and turning the kitchen into a full-blown food production line, I thought it might be a good idea to show that there are easy solutions out there. You don’t always have to go big — sometimes simple really is best.

So, I reached for a box. Not just any box — the Betty Crocker Gluten-Free Chocolate Fudge Brownie Mix. And you know what? I have zero regrets.
The brownies were everything you want them to be: gooey, rich, fudgy, and packed with chocolatey goodness. They had that crackly top you only get from proper brownies, and the middle? Just the right side of underbaked. The whole house smelled like a bakery. My three-year-old declared them “Yummy!” and my wife had to be gently reminded to share.

The heat slightly melted the chocolate and helped everything stick perfectly, without losing the definition of each treat. The end result? A traybake that looked far more impressive than the effort it took — and tasted even better.
It wasn’t homemade in the traditional sense, but it was made at home. And that’s the bit that counts.
There’s no shame in making life easier. Especially when the result is this delicious. Sometimes the most helpful thing we can do for ourselves is to take the pressure off, enjoy the time with family, and reach for something that just works.
