How I Learned to Love Gluten Free Sweet Treats and Desserts

What are your favorite types of foods?

If I had to pick a favourite type of food, there’s no contest: it’s sweet, sweet, sweet. My sweet tooth rules the show, and I’ll choose dessert over dinner any day. Chocolate, pastries, pancakes, cakes, you name it, I’m there.

Lately, I’ve been on a mission to perfect the humble cake in a mug. The concept seems simple enough: flour, sugar, a little egg, microwave, done. But my early attempts? Let’s just say the microwave has produced more rubbery sponges than fluffy delights. It’s definitely a work in progress, but I’m determined. There’s something so satisfying about creating a personal-sized treat in minutes and even better when it’s gluten free.

Being coeliac has made finding indulgent sweet treats a bit of a minefield. In the past, I’d often have to settle for “just okay” options or skip them entirely. But the gluten free world has come a long way, and discovering amazing bakeries has made all the difference. Places like Poets Bakery and Leigh’s Gluten Free Bakery are absolute game changers. Their cakes, pastries, and sweet treats prove that living gluten free doesn’t mean living without indulgence.

For me, the journey of baking my own cakes and discovering these bakeries is about more than just satisfying my sweet tooth. It’s a little act of creativity, a little act of self-care, and a reminder that living gluten free doesn’t mean missing out on the things you love.
