If I Won the Lottery: Family, Gluten-Free Dreams, and a Garden Full of Hedgehogs

What would you do if you won the lottery?

If I won the lottery, the first thing I’d do is buy a house – somewhere cosy where we could settle down and create loads of happy memories as a family. I’d finally have space for a dream kitchen where I could experiment with all sorts of gluten-free creations and host big gatherings at The GF Table.

I’d definitely spoil my wife – she’s earned it. Whether it’s a fancy spa weekend, a surprise trip to her dream destination, or just hiring someone to take care of all the boring stuff like cleaning, she’d be living her best life.

I’d also want to give back. Being coeliac isn’t easy, so I’d love to fund projects that make gluten-free food more affordable and easier to access. Maybe even set up a quirky little café that’s 100% gluten-free, where everyone can feel safe ordering anything off the menu without checking labels.

I’ve always loved nature and would put some of that money into rewilding projects or maybe even buy a small woodland where people can come to relax, explore, and recharge. Oh, and I’d get some hedgehogs. They’re adorable, easy to care for, and I’ve always thought it would be fun to create a little sanctuary for them. Plus, my son would love spotting them running around the garden!

I’ve always wanted to volunteer but never had the time. Winning the lottery would mean I could finally get stuck in – whether it’s helping at food banks, sharing my gluten-free journey to help others, or even teaching kids to cook.

Of course, I’d keep some fun for myself. A trip to Italy to find the best gluten-free pasta, upgrading my gaming setup, and tracking down some rare science fiction books for my collection would all be on the list.

But really, the best part would just be slowing down, spending more time with my family, and finally living life without the constant pressure of a to-do list. And hey, who wouldn’t want a garden full of happy little hedgehogs?
