How I Overcame Coeliac Disease with a Gluten Free Diet

A person wearing a brown apron and a light-colored patterned long-sleeved shirt stands behind a white counter, chopping red onions on a wooden cutting board. The person's hands are visible, one holding the onion and the other holding a silver knife. Scattered around the cutting board and on the counter are various fresh vegetables and herbs, including green peppers, radishes, leafy greens, dill, parsley, and lemons. Some of the chopped vegetables are in a wooden bowl. A clear glass bottle filled with yellow liquid, possibly olive oil, stands near a small white pitcher. The background shows a white kitchen cabinet with vertical panels. The lighting is bright and natural, highlighting the fresh ingredients.

Describe one positive change you have made in your life.

One positive change I’ve made in my life was going gluten free after being diagnosed with coeliac disease (also known as celiac disease in the US). At first, it felt overwhelming—suddenly I had to rethink everything I ate. But that one shift completely transformed my life for the better.

Before my diagnosis, I was constantly tired, bloated, and unwell without really understanding why. Cutting out gluten gave me back my energy, cleared the brain fog, and finally brought some consistency to how I felt day to day. It was like getting my life back.

Going gluten free didn’t just improve my physical health—it also changed my relationship with food. I became more mindful about what I eat, more experimental in the kitchen, and more connected to a global community of people living with coeliac/celiac disease.

It hasn’t always been easy (especially eating out!), but this change has been one of the most positive and empowering things I’ve done for my health and happiness.

Some of the earlier images on this site are AI-generated because, let’s be honest, I had neither the time nor the skills to snap Pinterest-worthy photos while juggling another job. But hey, practice makes progress! These days, I’m feeling much braver behind the camera. Happy reading (and judging my photos), everyone!
