Is there anything more British than a golden, crispy yorkshire pudding? If you’re gluten free, you might think they’re off the table, but not anymore! This simple recipe brings back all the joy of this classic side dish, perfectly puffed and light as air.
Yorkshire puddings aren’t just for roast beef, lamb, or chicken (though they’re a match made in heaven). They’re brilliant with sausage and mash or even stuffed with your favourite fillings for a quick and easy meal.
With this recipe, you’ll have fluffy, gluten free yorkshire puds that everyone will be reaching for, gluten free or not!
Ingredients
- 50g (2oz) gluten free plain flour
- 50g (2oz) cornflour
- 3 medium eggs
- Pinch of salt
- 125ml (5fl oz) milk

- Whisk

- Muffin tray
- Oven mitts
Directions
- Preheat the Oven:
- Preheat your oven to 220°C (200°C fan) / 425°F / Gas Mark 7. Place a small amount of oil into each hole of a muffin tray and put the tray in the oven to heat.
- Prepare the Batter:
- In a large mixing bowl, combine the gluten-free plain flour, cornflour, and a pinch of salt. Create a well in the centre, crack in the eggs, and whisk until smooth. Gradually add the milk while whisking to form a lump-free, smooth batter.
- Rest the Batter:
- Let the batter rest for at least 15 minutes. This helps create lighter Yorkshire puddings.
- Heat the Oil:
- Once the oil in the muffin tray is hot and slightly smoking, carefully remove the tray from the oven using oven mitts.
- Fill the Tray:
- Pour the batter evenly into the muffin tray holes, filling each about halfway.
- Bake:
- Return the tray to the oven and bake for 20-25 minutes. Avoid opening the oven door during cooking to ensure they rise properly.
- Serve:
- Remove the Yorkshire puddings from the oven when golden and crisp. Serve immediately as a side with your roast dinner.
Optional Tip
For extra flavour, add a sprinkle of dried herbs or a pinch of garlic powder to the batter.
