Loaded fries are one of those foods that feel slightly chaotic in the best possible way. A big pile of hot chips, layers of toppings, and absolutely no expectation that you are going to eat them neatly.

They are the kind of food that appears in pubs, street food markets, and late night takeaway menus, usually covered in melted cheese, sauces, and whatever else the kitchen feels like throwing on top.

The problem for anyone living with coeliac disease is that loaded fries are also one of the easiest things to get wrong when it comes to gluten.

The chips themselves might be gluten free, but the toppings are where things can fall apart quickly. Spice mixes, sauces, marinades, and even the oil the chips are fried in can introduce gluten without anyone noticing. It is one of those dishes that looks safe but often is not.

That is exactly why I like making them at home.

When you control the ingredients, loaded fries become one of the easiest comfort foods to keep completely gluten free. You can build the layers exactly how you want them, use proper gluten free ingredients, and pile everything on without worrying about cross contamination.

This recipe is my version of ultimate loaded gluten free fries. The goal here is simple. Properly crisp fries as the base, bold savoury toppings, and enough melted cheese and flavour to make the whole thing feel slightly indulgent.

It is not meant to be delicate or tidy. Loaded fries should be messy, generous, and designed for digging in with a fork while everything is still hot.

They also work brilliantly for sharing. You can put the whole tray in the middle of the table and let everyone get stuck in, or keep the entire thing to yourself if it has been that kind of day. No judgement here.

The best part is how flexible the idea is. Once you have the base sorted, you can take it in all sorts of directions. Add smoky bacon, spicy jalapeƱos, caramelised onions, or even leftover chilli if you have some in the fridge.

But this version hits that perfect balance of crispy, cheesy, salty comfort food while staying completely gluten free.

Sometimes that is exactly what you need.

GF Table’s Ultimate Loaded Gluten-Free Fries

Crispy golden fries loaded with savoury toppings, melted cheese, and bold flavour. These ultimate loaded gluten free fries are easy to make at home and completely safe for coeliacs. Perfect as a sharing dish, comfort food treat, or indulgent snack when you want something seriously satisfying without worrying about hidden gluten.

Ingredients
  

  • 250 g Gluten Free Frozen Fries
  • 2 Stems of Spring Onion Diced
  • 50 g Pancetta
  • ½ Red Pepper Diced
  • ¼ Red Onion Sliced
  • 100 g Grated Mozzarella
  • 50 g Sliced Mozzarella
  • Salt
  • Pepper

Instructions
 

  • Preheat your oven or air fryer according to the instructions on the frozen gluten free fries packet. Cook 250 g of fries until they are golden, crispy, and piping hot.
  • While the fries cook, place a frying pan over medium heat. Add the 50 g pancetta and cook for 2 to 3 minutes until it begins to crisp. Add the diced red pepper, sliced red onion, and diced spring onion and cook for another 2 to 3 minutes until softened and fragrant.
  • Spread the cooked fries onto an oven safe dish or tray.Scatter the pancetta and vegetable mixture evenly over the fries.
  • Sprinkle the 100 g grated mozzarella over the fries, then layer the sliced mozzarella on top for extra melt and stretch.
  • Place the dish under a hot grill for 2 to 3 minutes, just until the cheese melts and becomes bubbly.
  • Remove from the grill, season lightly with salt and pepper, and serve immediately while everything is hot, crispy, and gloriously cheesy.

Notes

Alternative Ingredients
Instead of pancetta you could replace with sweetcorn or even more diced pepper.
Replace the pancetta with streaky bacon.
